Baked Cheesy Garlic Cauliflower

I will never look at Cauliflower the same again. I bought one the other day with the thought of trying to get some more fresh vegetables in. I looked at it in the fridge today and realized I better use it before it goes bad. I looked at the other ingredients I had and this is what I came up with. 

I can't tell you how delicious this was. It just melts in your mouth. It doesn't have tons of calories because it is just a little bit of cheese and butter but just enough seasoning for a wonderful flavor. I will double the batch next time with 2 Cauliflowers because I ate three servings alone.

Ingredients

1 fresh whole Cauliflower
4 slices of white cheddar cheese
Sliced green onions or dried onions (desired amount)
1-2 teaspoons of minced garlic (I used 2)
3-4 Tablespoons of butter (I used 4)
1/4 cup of Parmesan cheese or desired amount
Salt and Pepper
Dried parsley flakes

Directions

 Take your whole Cauliflower and cut off the end so you just have the Cauliflower. Cut it or break it up into chunks just like the picture below. Place in a glass dish.  Sprinkle minced garlic on top. Break up your cheese and tuck it all around, sprinkle desired amount of onion and parsley flakes.  Pour melted butter all around the top and then top it with the Parmesan Cheese, salt and pepper. Bake at 350. (My oven is very old so the cook time is different than most) Cook for 25 minutes and keep checking until desired brown on top. You want it to be perfectly tender and not crunchy. If it is still crunchy put it back in.
