I for one am really happy for low cal recipes like this one. I love the taste of food so dieting is about as fun as getting a Root Canal because I don't want to give up the great taste of good food. I just can't do it! Well, I could but I don't want to.
I'm sure I could fatten this up a little bit if I wanted to by adding real crispy Bacon and some Hidden Valley Ranch for some extra taste but it really does look wonderful just the way it is! Don't you think? I could really eat this! You could always add some goodies if you wanted.

In a small bowl combine red onion, lime juice, olive oil, pinch of salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion.
