Shredded Pork Tenderloin in the Crock Pot




Pork Tenderloin with Mashed Potatoes and Gravy

I have always wanted to but never have made a Pork Tenderloin. Smith's had them on sale so I decided it was time to do while the price was right. I had NO IDEA how much meat this was going to make! I ended up getting THREE different meals out of it. It turned out absolutely delicious and the meat just falls apart and melts in your mouth. It is so easy to make in the Crock Pot and takes minutes to prepare. 

I threw the package away but when I opened it there were two pieces in there. There are lots of different pork cuts but this one is the Pork Tenderloin. Just remember that it is a little more expensive but goes a long ways. 

Recipe #1

Ingredients

1 Pork Tenderloin
Seasoning of choice 
(I used Salt and Pepper, Garlic Salt, 2 T of minced Garlic, Lawry's, Johnny's Seasoning, Dried Parsley Flakes and Onion Flakes)
1 1/2 cups of water
1 can of Chicken Broth
Flour
Olive Oil
Mashed Potatoes
Vegetable for side

Directions

Rinse off and plop the Pork Tenderloin in the Crock Pot. Season the heck out of it and add a cup of water.  I cooked mine on low for 7 1/2 hours. You will know it is done when it is easy the shred with a fork. That's it! Your shredded pork is now done and tastes amazing. 

I decided to make a gravy with the juices in the crock pot by putting them in a pan and adding a can of chicken broth. In a separate bowl mix together some olive oil and flour until you have a thick paste. You can add a little at a time and bring to a boil until you get desired thickness. You can add more flour if needed for thickness. Use a hand mixer to mix it all together with no clumps of flour in the gravy. I like to add a dash of Kitchen Bouquet Browning & Seasoning Sauce to give it a little color and flavor. My mother has been using this for as long as I can remember. 

Make your mashed potatoes and your side dish. I put a little bit of butter on top of the mashed potatoes and then topped with gravy. Top with pulled pork, salt, pepper and a little extra gravy.

Shredded Pork Enchilada

These were amazing and went quick.

Ingredients

Scoop Tortilla Chips
1 - 10 oz Can of Enchilada Sauce (I used Old El Paso)
1/4 cup of Sour Cream
Green onions chopped
Cilantro
Shredded Cheese of Choice ( I used sharp cheddar cheese)
1 small can of green chili's

These were incredible and so easy to make. I layered to bottom of the pan with Scoops Tortilla chips and then put some regular triangle chips up the sides for decoration. I topped the chips with shredded pork and poured a can of green chili's on top of that. In a separate bowl combine a small can of enchilada sauce with 1/4 cup of sour cream and whisk together until creamy. Pour over top of chips and then top it with cilantro and chopped green onions.  Add loads of your choice of cheese, salt and pepper and bake at 450 degrees for 10 minutes then broil while watching to give it a browning on top. Serve with toppings of choice. I used salsa, cilantro, green onions and sour cream. Divine!
 







I can't tell you how incredibly delicious these two recipes were. I still have a small ziploc full of shredded pork and I am going to use it for a salad for work tomorrow. Like I said, this goes a really long way and you  are sure to have to have some full and satisfied bellies.
