Linguine Vegetable Alfredo Bake


Yep, I was in that mood again to create something I never have made before. I was craving Alfredo sauce and noodles but also wanted some vegetables so I created this dish and then had to add bacon. You can change it up to use whatever veggies you want. I had these on hand and chopped up some onions with them and saute'd them in olive oil.

Ingredients
1 package of linguine noodles
1 sliced zucchini 
1 sliced yellow squash
1/2 pound of bacon cooked and crumbled
1/2 yellow onion chopped.
1/4 cup of Parmesan cheese
2 T. of olive oil
Salt and pepper to taste.

Alfredo Sauce
2 cups heavy cream
1 stick of butter
3/4 cup Parmesan cheese
1 teaspoon garlic salt
2 tablespoons cream cheese
1 cup of sharp cheddar cheese

Combine together the heavy cream, butter and cream cheese.  Simmer on medium heat until all melted. Add Parmesan cheese, cheddar cheese and garlic salt. Simmer for 15-20 minutes on low. Let slightly cool so it will thicken. 

Directions
Cook your linguine noodles. Slice up your zucchini, squash and chop up your onion. Add 2 tablespoons of olive oil to a heated skillet and saute until soft but still with just a little crunch. Salt and pepper to taste. In a casserole dish layer your cooked linguine (it won't take the whole package) then layer the cooked veggies and onions. Pour Alfredo sauce on top and sprinkle with Parmesan cheese and a little pepper. I cooked it until bubbly and brown on top at 350 degrees.
