Potato Bacon and Cheese Fritatta

This is something I have wanted to make for a while now, but haven't gotten around to doing it. Today when I was thinking about what I was going to make for dinner this popped in my head. I didn't want a very meaty meal but did want something with substance that would be satisfying. I LOVE breakfast for dinner. There is so much you can add to this recipe as far as veggies, etc. I made it simple for the kids. Add maybe some mushrooms, green peppers, green onions. I will definitely add green onions next time. This was really easy to make and only bakes for 15 minutes. 

Ingredients

1 large Russet potato or 2 smaller potatoes

1 pound of bacon chopped and cooked

1 medium onion

6 eggs

2 T. cream or milk (I used cream)

1 1/2 cups of sharp cheddar cheese or your choice of cheese

Salt and pepper to taste

Garnish with avocado and tomato

Directions

Chop up your bacon and onions. In a skillet cook the bacon until done. When just about done push bacon to the side and add the onions until caramelized using the same grease (you can pour some out if there is to much). While these are both cooking thinly slice the potato(s) and cook them in the microwave for 5 minutes layered on the bottom of a casserole dish. When the bacon and onions are done drain the oil real good. Mix the bacon and onions together and sprinkle on top of the cooked potatoes. In a separate bowl mix together well the 6 eggs with the cream then pour on top of bacon and onions (next time I will add green onions at this point). Sprinkle desired amount of cheese on top and add a little salt and pepper. I garnished mine off with cut up avocados and tomatoes and served with cottage cheese. It was delicious!

Bake at 350 degrees for 15 minutes depending on your oven.
